  1. In a large mixing bowl, add all of the homemade plain yogurt (1,060g, which is the total yield of 1 full batch of our homemade recipe).
  2. Add the lemon juice gradually (200g is used for a bolder, tangier flavor, but feel free to start with less and add to taste). Next, add your powdered sweetener gradually, tasting as you go until it reaches your desired balance of tartness and sweetness. (Note: The sweetener is used to keep the recipe healthy, but you can use regular sugar or any other sweetener you prefer). Whisk well until fully combined.
  3. In a small heatproof bowl, sprinkle the unflavored gelatin powder over the 60 ml of water and stir well with a spoon until all the powder is fully moistened to prevent lumps. Let it sit for 1 minute to bloom and hydrate properly.
  4. Microwave the hydrated gelatin for 15 seconds. Remove, stir well, and microwave for another 15 seconds until completely dissolved and clear.
  5. Because the melted gelatin is warm and the homemade plain yogurt is cold, do not pour the hot gelatin directly into the main bowl. Spoon a small amount of the yogurt mixture into the warm gelatin bowl and stir well to equalize the temperatures and prevent clumping.
  6. Pour this tempered gelatin mixture back into the main bowl with the plain yogurt and stir well until completely homogeneous.
  7. Transfer the lemon mousse with plain yogurt into a serving dish or individual ramekins. Refrigerate for 3 to 4 hours, or until completely set. It can remain refrigerated until ready to serve. Before serving, garnish with fresh lemon slices and lemon zest to taste. Serve chilled.

Note

1. Why 1,060g of Plain Yogurt?

The quantity of 1,060g corresponds to the total yield of 1 full batch of our Homemade Plain Yogurt recipe. If you are using store-bought plain yogurt instead, you can easily use between 1,000g and 1,060g without altering the final texture of this easy lemon mousse with plain yogurt.

2. Lactose-Free Option:

If you are lactose-intolerant or sensitive to dairy, prepare your homemade plain yogurt using lactose-free whole milk, lactose-free powdered milk, and lactose-free plain yogurt as a starter culture.

3. Sweetener or Sugar Options:

The recipe uses powdered sweetener to keep it healthy and low-calorie, but the choice is entirely up to you. You can easily substitute it with regular granulated sugar, raw cane sugar, or any everyday sweetener of your preference.

4. Lemon Flavor Intensity:

For a milder, subtler citrus flavor, you can reduce the amount of freshly squeezed lemon juice from 200g down to 150g.

Frequently Asked Questions (FAQ) - Easy Lemon Mousse with Plain Yogurt

Expand All:

1. Can I use less lemon juice if I prefer a milder flavor?

Yes! The 200g of lemon juice used in this recipe creates a bold, tangier lemon profile. If you prefer a milder, softer citrus flavor, start by adding half the amount (around 100g) and gradually add more to taste until you reach your desired level of tartness.

2. Why is it necessary to temper the gelatin before adding it to the plain yogurt?

Because the plain yogurt is cold and the melted gelatin is warm, adding the gelatin directly can cause thermal shock. This makes the gelatin solidify into rubbery little bits before it can mix smoothly. Stirring a small spoonful of cold yogurt into the warm gelatin first equalizes the temperatures, guaranteeing a silky-smooth cream.

3. Can I replace the sweetener with regular sugar?

Absolutely. While the recipe uses powdered sweetener to keep it light and healthy, you can easily sweeten your mousse with regular granulated sugar, raw sugar, or any sweetener you prefer. Add it gradually and taste as you go until you reach your ideal sweetness level.

4. How long does this lemon mousse last in the refrigerator?

This mousse can be kept in the refrigerator for up to 4 to 5 days. Keep it covered tightly with plastic wrap or inside an airtight container to prevent the surface from drying out or absorbing odors from other foods in the fridge.
