This Granulated Tapioca Brazilian Cheese Bread is an alternative, practical, and fast version of the Brazilian classic that highlights granulated tapioca as the main ingredient, providing a unique texture: softer, slightly elastic, and very flavorful.

The result is a light Granulated Tapioca Brazilian Cheese Bread with a delicate crust and an irresistibly fluffy interior.

Perfect for a special breakfast, an afternoon snack, or even to accompany a fresh cup of coffee, this cheese bread is an excellent alternative for those looking to vary traditional recipes without giving up the flavor.

Attention to the ingredient: Do not use tapioca starch (goma) or ready-to-use tapioca flour, as the texture and final result will be different. Make sure to use granulated tapioca.

  1. Place the granulated tapioca in a bowl.
  2. Heat the milk in the microwave for 1 minute on high power.
  3. Pour the milk over the granulated tapioca and stir until it is completely absorbed. Be careful not to overheat the milk, as this can make mixing difficult and cause lumps.
  4. Add the eggs, oil, and salt, mixing well by hand until a uniform dough is formed.
  5. Incorporate the grated or shredded parmesan cheese, stirring until well distributed throughout the dough.
  6. Preheat the oven to 350°F (180°C) for about 10 to 15 minutes.
  7. Shape the dough into balls of similar size to ensure even baking.
  8. Arrange the cheese breads on a baking sheet, keeping a distance of at least two fingers between them. No need to grease the pan.
  9. Bake at 350°F (180°C) for 25 to 30 minutes, or until golden brown.
  10. The cheese bread made with granulated tapioca has a different texture than the traditional one, being fluffier and softer.
  11. If desired, the cheese breads can be frozen and baked later in an air fryer at 340°F (170°C) for approximately 15 minutes.
  12. Now just enjoy this delicious Granulated Tapioca Brazilian Cheese Bread.

Note

1 - I do not grease the baking sheet; the cheese breads release easily after baking. If some are slightly stuck, just use a spatula. If you prefer to grease it, apply only a very thin layer of oil.

2 - Temperature and baking time may vary depending on your oven.

3 - To make it easier, wash your hands to remove any excess dough before rolling the balls; this prevents the dough from sticking to your palms.

4 - Do not overheat the milk, as besides making the mixing difficult, it can form lumps in the dough.
