Ingredients

Instructions

  1. Preheat the oven to 356 degrees Fahrenheit for 15 minutes. Use an electric mixer to beat the ingredients so you can get a perfect batter.

  2. In the mixer bowl, add the eggs, sugar, and the pinch of salt. Beat until you get a light and fluffy foam.
  3. Add the milk and oil to the mixture and continue beating until well incorporated.
  4. Turn off the mixer, remove the bowl, and gradually add the sweet cassava starch, stirring gently until the starch is incorporated into the batter.
  5. Add the cocoa powder to the mixture and continue stirring slowly. It is important to stir slowly so as not to compromise the structure of the brownie.
  6. In a microwave-safe container, melt the chocolate in short intervals, stirring every 30 seconds to ensure it melts evenly.
  7. When the chocolate is completely melted, add the milk and mix well until you get a creamy and homogeneous consistency. Then add the chopped cashew nuts and mix.
  8. Add this chocolate mixture to the brownie batter and stir (always slowly) until all the ingredients are incorporated.
  9. Grease a pan with oil and dust with cocoa powder to prevent the brownie from sticking.
  10. Pour the batter into the prepared pan and level the surface with a spatula.
  11. Bake in the preheated oven for approximately 25 minutes, or until a toothpick inserted in the center comes out clean.
  12. Remove from the oven and let it cool completely before cutting into pieces.
  13. Now you have a delicious brownie, perfect for those with dietary restrictions or who simply want to vary.
  14. Enjoy your delicious gluten-free brownie made with sweet cassava starch!

Frequently Asked Questions (FAQ) - Gluten-Free Brownie

Expand All:

Can I use tapioca starch instead of sweet cassava starch?

Yes! In the United States, sweet cassava starch is sold as tapioca starch or tapioca flour (the dry powder, not the wet hydrated flour used to make stovetop tapioca crepes). It is the dry starch.

Do these brownies taste like cassava or tapioca?

No, they don't. Because the recipe uses high-quality cocoa powder and melted semi-sweet chocolate, the chocolate flavor is rich and dominant, completely masking any flavor from the starch.

Can I make these brownies dairy-free?

To make them dairy-free, you can substitute the milk with a plant-based milk of your choice (such as almond, oat, or soy milk) and use dairy-free or vegan chocolate chips for the melted chocolate portion.

Why are there no eggs substitutes or xanthan gum in this recipe?

This recipe was specifically formulated to work naturally without gums like xanthan gum. The eggs, combined with the proper technique of beating them into a light foam and melting the chocolate, provide all the structure and fudgy texture you need.

How should I store these gluten-free brownies?

Store them in an airtight container at room temperature for up to 3 days, or keep them in the refrigerator for up to a week. You can also freeze them for up to 2 months.
