In a large mixing bowl, add all of the homemade plain yogurt (1,060g, which is the total yield of 1 full batch of our homemade recipe).
Add the lemon juice gradually (200g is used for a bolder, tangier flavor, but feel free to start with less and add to taste). Next, add your powdered sweetener gradually, tasting as you go until it reaches your desired balance of tartness and sweetness. (Note: The sweetener is used to keep the recipe healthy, but you can use regular sugar or any other sweetener you prefer). Whisk well until fully combined.
Microwave the hydrated gelatin for 15 seconds. Remove, stir well, and microwave for another 15 seconds until completely dissolved and clear.
Because the melted gelatin is warm and the homemade plain yogurt is cold, do not pour the hot gelatin directly into the main bowl. Spoon a small amount of the yogurt mixture into the warm gelatin bowl and stir well to equalize the temperatures and prevent clumping.
Pour this tempered gelatin mixture back into the main bowl with the plain yogurt and stir well until completely homogeneous.
Transfer the lemon mousse with plain yogurt into a serving dish or individual ramekins. Refrigerate for 3 to 4 hours, or until completely set. It can remain refrigerated until ready to serve. Before serving, garnish with fresh lemon slices and lemon zest to taste. Serve chilled.
1. Why 1,060g of Plain Yogurt?
The quantity of 1,060g corresponds to the total yield of 1 full batch of our Homemade Plain Yogurt recipe. If you are using store-bought plain yogurt instead, you can easily use between 1,000g and 1,060g without altering the final texture of this easy lemon mousse with plain yogurt.
2. Lactose-Free Option:
If you are lactose-intolerant or sensitive to dairy, prepare your homemade plain yogurt using lactose-free whole milk, lactose-free powdered milk, and lactose-free plain yogurt as a starter culture.
3. Sweetener or Sugar Options:
The recipe uses powdered sweetener to keep it healthy and low-calorie, but the choice is entirely up to you. You can easily substitute it with regular granulated sugar, raw cane sugar, or any everyday sweetener of your preference.
4. Lemon Flavor Intensity:
For a milder, subtler citrus flavor, you can reduce the amount of freshly squeezed lemon juice from 200g down to 150g.
