Gluten-Free Kibbeh: With 2 Frying Options, Air Fryer or Oil

Gluten-Free Kibbeh Dough
- In a bowl, add 130 g of oat bran followed by 130 g of hot water. Mix well and let it hydrate for approximately 10 minutes until it cools down.
- Add 60 g of rice flour, 80 g of processed onion, 14 g of chopped mint, 500 g of ground beef, a pinch of black pepper, the processed seasoning, and salt to taste.
- Mix thoroughly until all ingredients are completely homogeneous.
- Wash and dry your hands well to make shaping easier and prevent the dough from sticking.
- Shaping: Form small balls and then shape them into the classic cylindrical kibbeh form. Press the ends to elongate them, keeping the center thicker and the ends thinner.
- Choose your finishing method:
Option 1: Deep Frying
Heat the oil in a deep pot. The oil must be hot, but not extremely hot, to ensure the interior cooks properly without burning the outside.
Fry a few kibbehs at a time over medium heat to maintain better control of the frying process.
Option 2: Air Fryer
Place the kibbehs in the air fryer basket and fry at 200°C for about 10 minutes.
Turn the kibbehs over and fry for another 5 minutes at the same temperature until golden brown.

Note
1 - If you use too much water: Add more oat bran (but be careful: the more oat bran you add, the less you will taste the meat).
2 - If the dough sticks to your hands: While shaping, simply wash your hands, dry them thoroughly, and then continue shaping.
3 - Air Fryer: There is no need to preheat the air fryer.
4 - Freezing Tip: Fry all the kibbehs, let them cool, and freeze them to have a ready-to-eat option. When you're ready to enjoy them, just defrost in the microwave and heat them up. You’ll have delicious gluten-free kibbeh ready in just a few minutes!
